From Surplus Donations to Delicious Delights: 5 Egg Recipes to Try

At New Ethos Nottingham Housing, we are committed to supporting our service users in every way possible. One valuable resource we have is surplus food donations, which have become even more essential during these challenging economic times. In this blog post, we would like to highlight our recent collection of surplus food donations from Aldi Daleside Road in Nottingham, specifically focusing on the 2 large boxes of eggs we received. Eggs are versatile, and nutritious, and can be transformed into a variety of delectable dishes. Join us as we share 5 delicious egg recipes that can be enjoyed by our service users and anyone looking for affordable and wholesome meal ideas.

1. Classic Scrambled Eggs:

Start your day with a comforting and protein-packed breakfast by making classic scrambled eggs. Lightly beat the eggs, season with salt and pepper, and cook them gently in a non-stick pan until creamy and fluffy. Serve with toast or alongside sautéed vegetables for a nutritious meal to kick-start your morning.

2. Vegetable Frittata:

Put those surplus eggs to good use by whipping up a vegetable frittata. Sauté your choice of vegetables such as bell peppers, spinach, onions, and mushrooms in a pan. Beat the eggs with salt, pepper, and herbs, then pour them over the vegetables. Cook on low heat until the eggs are set and the frittata is golden brown. This versatile dish can be enjoyed for breakfast, lunch, or dinner.

3. Spanish-style Tortilla:

Transport your taste buds to Spain with a flavorful Spanish-style tortilla. Thinly slice potatoes and onions and sauté them until tender. Beat the eggs, season with salt and pepper, and pour over the potatoes and onions. Cook on low heat until the tortilla is golden on the outside and creamy on the inside. Serve in wedges as a delightful tapas dish or as a main course with a side salad.

4. Baked Egg Cups:

Get creative with baked egg cups, perfect for a quick and satisfying meal on-the-go. Line a muffin tin with slices of ham or bacon, crack an egg into each cup, and season with salt, pepper, and your favorite herbs or spices. Bake in the oven until the eggs are set to your desired consistency. These portable treats can be enjoyed warm or cold and customized with various fillings such as cheese, vegetables, or herbs.

5. Veggie Egg Fried Rice:

Transform leftover rice and vegetables into a flavorful and nutritious meal with veggie egg fried rice. Sauté mixed vegetables, such as carrots, peas, corn, and green beans, in a pan with a little oil. Push the vegetables to one side and pour beaten eggs into the other side of the pan. Scramble the eggs until cooked, then mix everything together with cooked rice. Season with soy sauce, salt, and pepper for a tasty and satisfying stir-fry.

The surplus food donations we received, particularly the 2 large boxes of eggs, have provided our service users with valuable ingredients to create nutritious and delicious meals. Eggs are a versatile staple that can be transformed into various dishes, from classic scrambled eggs to vegetable frittatas and Spanish-style tortillas. By utilizing these surplus donations, we empower our service users to cook affordable, wholesome meals and enjoy the nourishment and satisfaction that comes with it.
